Gingerbread

Whether in the form of little houses or classic cookies, we all love gingerbread. This simple recipe always works:

Ingredients


Dough:
- 300 g rye flour
- 180 g powdered sugar
- 100 g honey
- 2 eggs
- 1 tsp baking soda
- 3 tsp gingerbread spice
- 1 pinch cinnamon


Decoration:
- 100 g powdered sugar
- 1 egg white
- Sprinkles


Preparation


Mix the dry ingredients in a bowl and then add the honey and eggs. Knead everything into a smooth dough. Roll
out the dough to a thickness of just under one centimeter and cut out the desired shapes. Then bake the gingerbread in a preheated oven at 180°C, top and bottom heat, for approx. 8-10 minutes.
Once cooled, beat the egg whites and stir the sifted powdered sugar into the mixture. Decorate the cookies with the icing and sprinkle with the sprinkles.
Extra tip: Store the gingerbread cookies in a cookie jar. If the cookies are too hard, place an apple slice in the cookie jar overnight.

Spitzbuben


These delicate cookies have many names. In German-speaking countries, these jam-filled treats are known as Spitzbuben or Terrassenkekse. In Austria, they are usually called Linzer cookies. For the original recipe, simply add 50 g of almonds.


Ingredients


- 250 g softened butter
- 125 g sugar
- 1 medium-sized egg
- 400 g wheat flour
- 200 g jam for the filling, e.g., apricot or cherry


Preparation


Cream the softened butter with the sugar and then stir in the egg. Next, mix in the flour. Knead the dough again with your hands until smooth and shape it into two balls of equal size. Cover the dough balls with plastic wrap and place them in the refrigerator for at least one hour.
Roll out the chilled dough on a lightly floured surface to a thickness of about 3 millimeters. Now it's time to cut out the cookies. Use cookie cutters in the shape of flowers, circles, or stars. Cut out the center of half of the cookies using a smaller cutter. These will be the tops of the cookies. In the original recipe, Spitzbuben cookies are round, while Linzer cookies are flower-shaped and have three small round holes in the center, but you can choose whatever shape you like for your cookies.


Bake the cookies at 185°C for about 10-12 minutes, depending on their size, until they are golden brown. After cooling, spread jam, marmalade, or jelly on the flat side of the bottom cookies and place one of the cookies with a hole in the middle on top. Finally, sprinkle with powdered sugar.
