How to transform your home into a gourmet hotel

As temperatures fall steadily, the desire for cozy evenings with warming hot drinks and sweet treats increases. Whether it's coffee, tea or a classic mulled wine - winter tastes even better when the warming drink is accompanied by a dessert or two. We at the Hotel Fernblick also love and celebrate the cold winter season with a lot of love and passion for good food. Our head chef Florian Ganahl and his team enchant our guests every day and make culinary hearts beat faster.

But we also don't want to forget those loyal guests who are currently unable to indulge in our culinary temptations at the Fernblick. That's why Florian is opening his kitchen doors exclusively for you today and showing you how you can transform your own home into a gourmet hotel for you and your loved ones. How about, for example, original Vorarlberger Polsterzipfel with homemade apple sauce?

For the Polsterzipfel:

  • 300 g plain flour
  • 2 egg yolks
  • 30 g butter
  • 125 ml milk
  • 1 tbsp rum
  • Pinch of salt
  • Flour
  • Oil
  • Powdered sugar

Applesauce:

  • 500 g tart apples
  • 180 ml water
  • 80 ml white wine
  • 4 tbsp lemon juice
  • 80 g granulated sugar
  • 1 tbsp apple brandy
  • Salt, rum

It's so easy to conjure up your own gourmet dessert:

Mix the flour, egg yolk, butter, milk, 1 tbsp rum and a pinch of salt well and knead everything into a smooth dough. Wrap the dough in cling film and leave to rest for approx. 30 minutes. In the meantime, you can peel and quarter the apples and remove the core. Boil the liquid ingredients for the puree with sugar. Then cook the apples in the sauce until soft. Remove the pan from the heat and puree the apples with a hand blender. Once the apple sauce has cooled down, you can refine it with apple brandy to taste.

Now back to the padded tipples: roll out the dough on a lightly floured work surface to the thickness of a knife back (approx. 30 x 40 cm) and roll out rectangles (8 x 5 cm) using a pastry wheel. Heat plenty of oil (about 4 fingers high) in a frying pan and fry the dough pieces in it on both sides until they are golden brown. Use a slotted spoon to lift out the cushion tips and drain them on kitchen paper.
