Craving something hearty: Traditional dishes in Vorarlberg

For many of our guests, the traditional home cooking of the Montafon region is a particular highlight of their visit. Hearty Alpine cheese dumplings with Sura Kees are one of the specialities that give Vorarlberg its distinctive flavor. You can easily recreate our chef Florian's recipe at home.


Ingredients


-200 g dumpling bread
-2 eggs
-1/8 L milk
-100 g Räßkäse cheese
-100 g Sauerkäse cheese (or a cheese with a similar texture)
-1 onion
-2 tbsp butter
-1 tbsp vegetable oil
-1 tsp flour
-1 tbsp chopped lovage
-1 tbsp chopped chives


Preparation


Mix the eggs and milk together and cut the smoked cheese and sour cheese into small cubes. Peel the onion and cut it into small cubes. Then sauté it in a little butter.
Now prepare the dumpling mixture. Mix the breadcrumbs with the cheese, the golden brown sautéed onion cubes, herbs, salt, pepper, nutmeg, and flour. Pour the egg and milk mixture over the ingredients and stir vigorously. Then let the mixture stand for a while.


Now form patties about 10 cm in diameter from the dumpling mixture. Heat the remaining butter and oil in a pan and fry the patties for 2-3 minutes until the underside is golden brown; turn the patties and fry on the other side for 2-3 minutes. Make sure that the patties do not brown too quickly; they should heat evenly.
Arrange the Almpress dumplings on a plate with fresh leaf salad and enjoy!


Tip: The Almpressknödel will be particularly flavorful if you blanch a handful of young nettle leaves, chop them finely, and mix them into the dumpling mixture.
